Gujrati Dhokla is an extremely popular snack cum breakfast recipe that people love to eat across India. A classic Gujarati recipe, this dish can be prepared on any occasion and is loved by kids as well. Besan Dhokla is an easy recipe that you can cook with common ingredients available in your home such as gram flour (besan), lemon juice, semolina, turmeric, sugar, fruit salt and a tempering made of mustard seeds, curry leaves, and green chillies. Sweet and sour in taste, this dhokla recipe will be loved by all! Try it!


    • 2 tablespoon lemon juice
    • 2 tablespoon semolina
    • 5 teaspoon sugar
    • 1 teasspoon fruit salt
    • 2 tablespoon refined oil
    • 2 tablespoon ginger juice
    • 1/3 teaspoon powdered turmeric
    • 1 1/2 teaspoon salt
    • 2 cup gram flour (besan)
    • boiling water as required


    • 1 teaspoon mustard seeds
    • 10 curry leaves
    • 1 pinch asafoetida
    • 4 finely chopped green chillies

Step by Step method

    • Step 1.The first step is to prepare the batter of dhokla. For the same, take a bowl and mix together sugar and water to make the sugar syrup. Then, take another bowl and mix together gram flour, turmeric powder, salt, semolina, and ginger juice. Now, pour the sugar syrup in this bowl to make the batter for the dhokla.
    • Step 2.Next, add half a glass of lukewarm water in batches to the prepared dhokla batter for a fine consistency. To bring that sourness in the dhokla, add lemon juice and mix well. Cover the bowl with a lid and keep aside this dhokla batter for around 20 minutes to rise.
    • Step 3.Now, you need to prepare the tempering syrup for the dhokla that will make it spongy and soft. For the same, put a pan on medium flame for about 2 minutes so that it becomes hot. Once it is hot enough, heat refined oil in it. Then, add asafoetida in it along with mustard seeds, and saute for a few seconds. Quickly, add fresh chillies and curry leaves in the pan and saute till the curry leaves turn light brown in colour.
    • Step 4.Now, add water to the pan along with salt and sugar, and bring it to a boil. Let the contents of the pan simmer for about 3-4 minutes to prepare the syrup. When the syrup is ready, turn off the burner and transfer to a bowl. Keep it aside.
    • Step 5.By now, the batter will be ready to make besan dhoklas. Put an aluminium bowl on medium flame and use a dhokla stand. Add water in the bowl and bring it to a boil. Now, take a steel plate and grease it with oil. Then, add fruit salt into the batter, quickly add a few drops of water and whisk the batter.
    • Step 6.Now, pour the batter into the greased steel plate and put this plate inside the dhokla stand. Cover and cook the batter for about 20 minutes. Once the batter is cooked, take out the dhokla stand, and cut the dhokla into pieces and pour the prepared syrup on top of the dhokla pieces. Besan Dhokla is ready to eat, garnish with fresh coriander leave and serve quickly!
